Fanouropita (Traditional Greek cake)

Ingredients
  

  • 1 cup ACAIA or Aeolian Olive extra virgin olive oil
  • 1 cup white sugar
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup walnuts, coarsely chopped
  • 1/2 cup raisins
  • 1/2 water water
  • 3/4 cup fresh orange juice
  • 4 cups self-rising flour
  • 2 tbs powdered sugar (approximately)

Instructions
 

  • In a large bowl, mix the ACAIA or Aeolian Olive extra virgin olive oil, sugar, cinnamon, baking powder, baking soda, walnuts, raisins, water, orange juice, and flour.
  • Knead gently with hands, until the mixture is not sticky
  • Grease a cake pan (12 in or 30 cm diameter) and pour in the mixture
  • Bake in oven for 45 minutes at 356°F (180°C )
  • When ready, remove from oven and let it cool. Sprinkle with powdered sugar.
