
Fanouropita (Traditional Greek cake)

Ingredients
- 1 cup ACAIA or Aeolian Olive extra virgin olive oil
- 1 cup white sugar
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup walnuts, coarsely chopped
- 1/2 cup raisins
- 1/2 water water
- 3/4 cup fresh orange juice
- 4 cups self-rising flour
- 2 tbs powdered sugar (approximately)
Instructions
- In a large bowl, mix the ACAIA or Aeolian Olive extra virgin olive oil, sugar, cinnamon, baking powder, baking soda, walnuts, raisins, water, orange juice, and flour.
- Knead gently with hands, until the mixture is not sticky
- Grease a cake pan (12 in or 30 cm diameter) and pour in the mixture
- Bake in oven for 45 minutes at 356°F (180°C )
- When ready, remove from oven and let it cool. Sprinkle with powdered sugar.
